Tomatoes — A Quick Summer Side Dish
This recipe is great for summer barbeques, a weekend brunch, or light evening summer meals when you don't feel like a heavy meal.
When you cook tomatoes, their bitterness and acid qualities are reduced and you bring out their natural sweetness.
Grilled Tomatoes with Blue Cheese
Ingredients:
- 6 Roma tomatoes
- 3 tsp Blue cheese crumbles
- 3 tsp Bread crumbs
- Extra Virgin Olive Oil
- Parsley flakes
Directions:
- Lightly spray a cookie sheet pan with cooking spray. If you do not have a Teflon coated cookie sheet, lay a piece of aluminum foil on your flat tray.
- Cut Roma tomatoes in half horizontally through the middle.
- Sprinkle 1/2 tsp of blue cheese crumbles on top of each tomato half.
- Sprinkle 1/2 tsp of bread crumbs (I prefer Italian) on top of blue cheese.
- Drizzle olive oil* (just a few drops) over each tomato half.
- Sprinkle with parsley flakes to garnish.
- Grill/broil for approximately 5-7 minutes until cheese melts and tomatoes are warm.
OPTIONAL:
You can use *balsamic vinegar instead of olive oil in step 5 for a much richer taste.
You can also grill these on your grill outside instead of under the broiler.
Serve on a nice serving tray with a serving spoon.
This side goes well with chicken or fish.
I like to serve these tomatoes with a side of fresh steamed asparagus, sprinkled with balsamic vinegar.
