Try this healthy summer treat that is super quick to make!

Looking for a summer snack or dessert that isn't going to break the calorie bank? This healthy sweet treat is low in calories (only 57), high in dietary fiber, low in sodium and fat, and super delicious!

Simply multiply the ingredients per person and use the freshest ingredients you can find. Look for optional tips at the bottom of this recipe. You will also find a nutritional count and health score for this recipe with a nutritional analysis.

Berries — A Simple Super Food

Picked at the peak of ripeness during summer, berries are one of those super foods that are high in antioxidants, dietary fiber and are one of the slow carbs that will keep you feeling full longer.

The following recipe is great for summer barbeques, a weekend brunch, or a healthy snack between meals.

Berry Yogurt Parfait

Ingredients per Person:

  • ¼ cup fresh blueberries
  • ½ cup strawberries
  • ½ cup Honey Greek Yogurt

Decorating the Parfait

  • 1 tsp mascarpone cheese
  • 1 mint leaf
  • 1 strawberry on the side of the glass for decoration

Directions:

  1. Cut stems off strawberries and slice into quarters. Leave one strawberry with stem on for decoration.
  2. Spoon yogurt into martini glass. Top with blueberries and strawberries.
  3. Spoon mascarpone cheese on top and add a mint leaf.
  4. Cut a small slit on the bottom of the remaining strawberry with a sharp knife and place on the edge of the glass. Serves 1. Multiply ingredients by the number of dinner guests to make more.

This is a great dessert for summer or a healthy snack during the day.

OPTIONAL:

If you can't find honey-flavored yogurt, use plain and drizzle a tablespoon of honey over the top of all ingredients as a finishing touch

You can also use frozen berries which usually come in a medley of strawberries, blueberries and blackberries from your local supermarket if fresh berries are not in season
